Однако главным сдерживающим фактором его развития в Республике Беларусь является нехватка отечественного субстрата. Для выращивания грибов субстрат должен содержать полный набор макро- и микроэлементов, необходимых для их роста и развития. Сбалансированный и правильно подобранный питательный субстрат поможет обеспечить высокий и стабильный урожай на протяжении всего процесса производства. С этой целью был проведен групповой анализ питательных субстратов на стадии ферментации в процессе выращивания грибов. Показано, что в процессе подготовки (созревания) субстрата происходят изменения в его групповом составе, в частности наблюдается увеличение доли гуминовых веществ за счет снижения содержания лигнина, целлюлозы и легкогидролизуемых веществ.</p></abstract><trans-abstract xml:lang="en"><p>   The volumes of mushrooms industrial production, unlike many agricultural areas, are growing every year due to the ability to obtain finished products with high content of complete food protein all year round and independence from weather conditions. However, the main limiting factor for its development in the Republic of Belarus is the lack of domestic substrate. To grow mushrooms, the substrate should contain full set of macro- and microelements necessary for their growth and development. Balanced and properly selected nutrient substrate will help ensure high and stable yield throughout the entire production process. For this purpose, a group analysis of nutrient substrates was carried out at the fermentation stage in the mushroom growing process.
